I love food.
If you want a conversational starter for me, start talking about food. Restaurants, favorite dishes, sweets, I love it all.
I've been shaping up my cooking skills over the last couple of years, but I still look for recipes that are a) simple to put together b) stray away from too many processed ingredients and c) are delicious!
I'm definitely not chef status like the pioneer woman or anything, but I'm working on it :)
Here are a few of my favorite recipes I've found on pinterest. For the sake of convenience, I will include links.
1. Cajun Chicken Pasta - this dish is amazing! A little spice, creaminess, and chicken all wrapped up in one. What's not to love? (This link goes to the recipe where I found it on The Small Things blog, but it's a Pioneer Woman Recipe)
2. Hamburger Bean Nachos - or so I call it, in my own spin on this recipe. Instead of layering the chips within the other ingredients to make a type of casserole, I mix all of the ingredients together, bake it, and leave the chips out so I can dip them in once it's done! Voila, nachos! I choose to do it this way because the chips get soggy if you bake them inside, but it's your call!
3. Chicken Bacon Ranch Quesadillas - (scroll to the very bottom of the page in the link to view the recipe) These quesadillas are a easy recipe to throw together for lunch or a simple dinner! So delicious, full of flavor, and super easy!!
4. Poppy Seed Casserole - I recommend substituting the cream of chicken for this easy recipe. Never buy expensive, processed canned cream of chicken soup again! (You may want to add a little salt though). Of course you can use the cream of chicken if you'd like, but either way you have a super easy but delicious casserole, great for busy weeknight dinners or Sunday lunches!
5. Chicken and Gnocchi Soup - Ever had the chicken and gnocchi soup from Olive Garden? This is a copycat recipe. It's an easy comfort food great for any time of the year! The gnocchi won't take long to make, so you'll want to boil it and be ready to throw it right into the soup or it will get all wrinkly. (Weird way to describe a food? Oh well.)
6. Homemade Brownies - THESE BROWNIES. You'll never go back to the box again. So easy!
7. Homemade Blueberry Muffins - This is the recipe I go by for blueberry muffins because they're simple. I've also made these super moist blueberry muffins. They call for sour cream, and that's what makes them so moist. Remember that the secret to baking is to sift your flour and don't overmix!
8. Crock Pot Beef and Broccoli - You can make this ahead as a freezer meal, or assemble it all the day you're ready to prepare it. What's easier than simply pouring it all in a crockpot, turning it on, and leaving it there for a few hours? Nothing I tell you.
9. Spicy Bacon-Wrapped Meatballs - These meatballs are a man-pleasing appetizer for sure! I could eat 10 of them, and then the grease from the bacon starts making me feel queasy. And then I take a break and eat some more.
10. Crescent Roll Breakfast Casserole - This breakfast casserole isn't reserved for one meal only; it's also a good dinner option!
